A perfect summer side dish! Pair it with your grilled favorites! A couple weeks ago, Paul and I went on a rare dinner date out together. And when I say rare, I mean RARE. Eating out is just so expensive anymore, we just wind up sitting at home watching our favorite show and maybe getting pizza. I had a gift card to Bonefish Grill, we had never been before. I was impressed at the small menu, too many chain restaurants have pages and pages of menu items. I ordered salmon with an Asian sauce, and Paul had scallops and shrimp. Both came with a seasonal zucchini and tomato side dish that was out of this world! Don’t get me wrong, the seafood was really good and cooked perfectly (I’ve had overcooked salmon more times than I can count), but we honestly couldn’t get enough of that zucchini! Of course I came home scouring the web for ideas to replicate it at home and I think I’ve done it! This saute is perfect alongside any grill night dinners – and for you “gardeny” people (with your green thumbs and all, grr) a great way to use up the fresh produce! 🙂 Honestly, this is actually an amazing lunch all by itself – I’m not even kidding!
