Fresh zucchini with onion, soy sauce, sesame seed and chives! We are absolutely SWIMMING in zucchini and summer squash over here you guys, send help! I’m serious, I’ve been scouring the internet and all my various cookbooks for any and all zucchini recipes. This delicious Stir Fried Zucchini recipe came in just the right time! At this rate, the thing will be taking over my entire back yard in about 2 weeks! I kid, I kid. It’s such a fun thing to be able to grow food for your family in your own backyard. And this incredible zucchini side dish is a great way to enjoy this delicious squash! I absolutely love the fresh taste of garden veggies this time of the year! This side dish would be perfect with grill pork chops or even along with burgers and hot dogs. It’s great to have such a tasty and versatile side dish on the ready for quick nights! How do you stir fry zucchini? Honestly, it couldn’t be easier! Just heat up a bit of olive oil in a deep skillet and saute zucchini strips along with some thin sliced onion. In this recipe I used soy sauce and sesame seed to add some additional flavor at the end, but you could use fresh basil and balsamic vinegar instead if that’s what you have on hand.
