Italian hoagie ingredients mixed together and served on rolls – it’s the perfect way to meal prep school lunches for the whole week! It’s the most wonderful time of the year… 😀 NO, I’m not talking about that jingle bell time of the year, I’m talking about back-to-school, of course! When I was in high school, there was a popular commercial that ran in August with the parents happily dancing through the school supply section of the store along with this song. I totally identify with that commercial now that I’m a parent myself! Our boys have now been in school for a few days here in Pennsylvania and I’m happy to report that they’ve done so, so well. We are incredibly proud of them! We had some grumpy gus faces, of course, especially from Wesley when he realized school was beginning again. I finally heard him say yesterday, “Mom, I actually do like school.” I knew he would! And Silas, likewise, is doing an excellent job as well. I report about this every year and this year it is no different – packing school lunches is the BANE of my existence!! Most of the time I’m pulling something together quick for them from the fridge with half a sleepy eye open praying for the coffee maker to be finished. Poor kiddos! I needed a quick solution to encourage myself to make some lunches up ahead of time for smoother mornings in this house. These Hoagie Salad Sandwiches are inspired by a Hoagie Dip that my Grandmom always made growing up in Philly. Yes, it’s exactly what it sounds like: hoagie ingredients, mixed together and spread on slices of bread – so fun! I simplified the classic recipe as a way to make up a large batch of Hoagie Salad on Sunday night and just have it ready to make quick sandwiches throughout the week. You can certainly cater the recipe below according to your family’s tastes as well!
