Is there anything more comforting than a warm bowl of tomato soup with a melty grilled cheese sandwich to go with it? Especially in this chilly time of the year. Soup is just so perfect to warm you up right down to your toes! Before the kiddos came along, Paul and I would meet for lunch a lot. One of our favorite places was a chain that makes absolutely fantastic soups and sandwiches – I’m sure you know which one I’m talking about! ? Married with 3 little boys later, and we’re realizing how difficult, and how expensive, it can be to just go out to lunch. I recently discovered these AH-MAZING soups during my weekly grocery trip through Walmart. I found them in the frozen deparment alongside the other various frozen entrees. Considering the price difference between these affordable frozen soups at just under $5.50 compared to what the restaurant version costs, I snapped these up to try them at home. Friends, you will not believe how good these are!! Prep couldn’t be simpler, and there’s a few methods you can use on the box, but I just dropped the entire frozen bag into a pot of boiling water until the soup was hot. Doesn’t get any easier than that! I absolutely HAD to come up with a sandwich to go with it and this Caprese Panini turned out perfect with the flavors of the soup. No ratings yet Print Pin Rate Course: Main CourseCuisine: American Prep Time: 5 minutes minutesCook Time: 35 minutes minutesTotal Time: 40 minutes minutes Servings: 4 servings Author: Kelly Miller Ingredients▢ 1 pkg frozen Great Value Tomato Basil Soup▢ 8 slices sourdough bread▢ 8 oz fresh mozzarella sliced▢ 3 roma tomatoes sliced▢ 1 bunch fresh basil with leaves torn off▢ drizzle of balsamic vinegar InstructionsPlace frozen bag of soup into a large stockpot. Cover with water and heat to boiling. Cook for 35 minutes or until contents of bag is hot.Meanwhile, heat a countertop grill or stovetop griddle over medium heat. Prepare sandwiches by layering sliced mozzarella, tomatoes, basil leaves, and optional balsamic vinegar on top of bread.Grill or press sandwiches for 3 - 5 minutes (flip and cook on other side as well if using a stovetop griddle). Allow sandwiches to cool slightly.Carefully remove bag from boiling water in stockpot using tongs. Allow soup to set for 5 minutes. Carefully cut open bag and divide hot soup among four bowls.
