I'm going to level with all of you here: some days I am absolutely NOT in the mood to cook dinner. Like, at all. Ready to break out the cold cereal and call it a night. Please tell me I'm not alone in this problem!

Most nights I'm into it, mainly because there are now five people living here and if we ate out every night of the week we'd go broke in no time. Plus, honestly, going out to eat makes a busy school night even busier and more exhausting.

But then there are those nights when, it's only 4:00pm and I'm already done. DONE. And I'm stressed out just thinking that they all need to be fed and even my eyelashes feel tired. That is when I break out my tried and true, don't even need to give it any brain power, dinners. Recipes that I know I usually always have the ingredients for and meals that I know they all will eat any night of the week.

Garlic Bread Tuna Melt Sandwich

I have officially just added these Garlic Bread Tuna Melt Sandwiches to that list. If you are super duper busy during the school year with activities, homework, and sports - you absolutely NEED to add this one to your go-to meal list. Classic tuna sandwiches are always on that list for me, but these are immediately the replacement! The garlic and cheese, combined with the fresh albacore tuna, tomato slices, and basil just make the flavors pop - all with very LITTLE effort on my part!

Frozen garlic bread slices topped with albacore tuna, roma tomatoes, and fresh basil.

Yield: 8 open face sandwiches

13 oz box frozen Texas toast with cheese
5 oz Bumble Bee® Solid White Albacore Tuna, drained
3 roma tomatoes, sliced
1/4 cup fresh basil, chopped

  • Place frozen garlic bread slices on a lined cookie sheet.
  • Top frozen slices evenly with chunks of albacore tuna, sliced tomato, and fresh basil.
  • Bake at 425 for 7 - 10 minutes.
  • Allow sandwiches to cool slightly before serving.
