Onion Roasted Potatoes

The first time I made these potatoes, I kept going back to the cookie sheet on the stove and picking off pieces to eat. When I made these at my parent's house along side Slow Cooker Sloppy Joes, my sister did the exact same thing. Extremely easy, sooo tasty, and only 3 ingredients (and one is potatoes)! Trade in the canned veggie side dish one night for these, you'll come back here and thank me. 

Onion Roasted Potatoes

4 large potatoes
1 packet (2 oz) onion soup mix 
olive oil
Chop potatoes into large bite sized pieces. Spray cookie sheet with cooking spray (I line my with foil first, these babies stick like crazy). Spread potatoes on cookie sheet in a single layer. Drizzle olive oil over potatoes and sprinkle onion soup mix packet over potatoes. Stir to coat. Bake at 375 for 30 minutes, stir. Bake for another 15 minutes or until potatoes are soft. The little crusted bits are the best part. :)
