Sloppy Joe Cornbread Casserole
Sloppy Joe Cornbread Casserole recipe made with cornbread, ground beef, ketchup, brown sugar, garlic powder, and shredded cheese.

- 15 oz pkg cornbread mix
- 2 eggs beaten
- 1 1/3 cups milk
- 2 lbs lean ground beef
- 1 cup ketchup
- 2 tbsp brown sugar
- 2 tsp yellow mustard
- 1 tsp garlic powder
- 15 oz can corn drained
- 1 1/2 cups shredded cheddar cheese
In a mixing bowl, whisk the dry cornbread mix, eggs, and milk until smooth.
Spray a 9 x 13 baking dish with non stick spray.
Spread cornbread batter evenly into dish.
Bake at 350 for 20 minutes (cornbread will not be completely baked).
Meanwhile, brown and drain the ground beef in a skillet.
Mix in ketchup, brown sugar, mustard, and garlic powder.
Keep sloppy joe mixture on low heat until cornbread finishing the first baking time.
Remove partially baked cornbread from oven.
Top evenly with drained corn.
Spread sloppy joe mixture evenly over corn.
Sprinkle shredded cheese over top of casserole.
Return to oven and bake an additional 15 minutes until the cheese is melted and the cornbread is done.
Remove from oven and allow casserole to rest 5 minutes before serving.
