Ingredients

  • 15 oz pkg cornbread mix
  • 2 eggs beaten
  • 1 1/3 cups milk
  • 2 lbs lean ground beef
  • 1 cup ketchup
  • 2 tbsp brown sugar
  • 2 tsp yellow mustard
  • 1 tsp garlic powder
  • 15 oz can corn drained
  • 1 1/2 cups shredded cheddar cheese

Instructions

  • In a mixing bowl, whisk the dry cornbread mix, eggs, and milk until smooth.
  • Spray a 9 x 13 baking dish with non stick spray.
  • Spread cornbread batter evenly into dish.
  • Bake at 350 for 20 minutes (cornbread will not be completely baked).
  • Meanwhile, brown and drain the ground beef in a skillet.
  • Mix in ketchup, brown sugar, mustard, and garlic powder.
  • Keep sloppy joe mixture on low heat until cornbread finishing the first baking time.
  • Remove partially baked cornbread from oven.
  • Top evenly with drained corn.
  • Spread sloppy joe mixture evenly over corn.
  • Sprinkle shredded cheese over top of casserole.
  • Return to oven and bake an additional 15 minutes until the cheese is melted and the cornbread is done.
  • Remove from oven and allow casserole to rest 5 minutes before serving.
