Slow Cooker Hula Chicken

Slow Cooker Hula Chicken features tender, moist chicken slow cooks in BBQ sauce and crushed pineapple and served over rice!

Ingredients

  • 4 boneless skinless chicken breasts
  • 8 strips turkey bacon divided
  • 1 cup crushed pineapple
  • 3/4 cup BBQ sauce
  • 1 cup pineapple chunks
  • 2 cups cooked Jasmine rice

Instructions

  • Place chicken in the bottom of a large Crockpot.
  • Cook bacon as desired.
  • Cut 6 pieces of bacon in smaller pieces and lay on top of chicken.
  • In a small bowl, stir together BBQ sauce and crushed pineapple.
  • Pour over chicken and bacon.
  • Cook on high 3 hours or low 6 hours, or until chicken is cooked through.
  • Serve over hot Jasmine rice with ladling sauce from slow cooker over rice and chicken and topped with remaining bacon, crumbled.
