I feel like I was really prepared for the craziness of September. We had a fun summer, were able to take the kids on fun day trips and a short but memorable mountain vacation, and we made lots of memories. I enjoyed/tolerated the heat, but I was ready for the regular schedules to resume and the cooler weather to start. Or so I thought. Fast forward to this week. The second full week of school for both Paul and Silas. Soccer has begun. Looking over my calendar right now, literally every Saturday is booked from here until the first week in November. And it’s only a matter of time until that fills up, too. I’m eating my words big time here, people! I’m missing the lazy, crazy days of summer today. Not to mention it’s been rainy, hot, and humid the past few days around here. This Slow Cooker Hula Chicken is the perfect easy, no fuss dinner to help you on those insanely busy weeknights. And you know what? It has a BBQ-y, pineapple-y, tropical taste over rice to bring you back to summer – if only for dinner time! Jasmine rice is by far my favorite rice – it’s smells absolutely amazing as it’s cooking. It has a buttery smell, almost like popcorn!
