Ingredients

  • 2 cups raisins
  • 3 cups flour
  • 1 cup sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • 1/4 cup cold butter
  • 1 1/2 cups milk
  • 2 eggs beaten

Instructions

  • Fill a saucepan half way with water and bring to a boil.
  • Add raisins and continue boiling for 3 minutes.
  • Drain and lightly dust with flour.
  • In a large mixing bowl, sift together flour, sugar, baking powder, and salt.
  • Blend in cold butter with a pastry blender or two knives.
  • Stir in milk and eggs until fully moistened.
  • Carefully stir in raisins.
  • Divide batter up evenly between 24 muffin cups with paper liners or greased well.
  • Bake at 350 degrees for 20 - 30 minutes. Do not overbake.
  • Allow muffins to cool completely before serving.
