- 2 cups raisins
- 3 cups flour
- 1 cup sugar
- 3 tsp baking powder
- 1 tsp salt
- 1/4 cup cold butter
- 1 1/2 cups milk
- 2 eggs beaten
Fill a saucepan half way with water and bring to a boil.
Add raisins and continue boiling for 3 minutes.
Drain and lightly dust with flour.
In a large mixing bowl, sift together flour, sugar, baking powder, and salt.
Blend in cold butter with a pastry blender or two knives.
Stir in milk and eggs until fully moistened.
Carefully stir in raisins.
Divide batter up evenly between 24 muffin cups with paper liners or greased well.
Bake at 350 degrees for 20 - 30 minutes. Do not overbake.
Allow muffins to cool completely before serving.
