The perfect sweet muffins for breakfast at St Patty’s Day or any day! The beginning of March is in a few short days and even though we are in the thick of winter right now, this is one of the busiest times of the year for our family. It seems that most of our birthdays are in February and March, and our wedding anniversary is also in March. I actually really like it because I know a lot of people tend to get cabin fever when the weather is cold and you have to stay in the house all day with the kids. It can get depressing after a while! This past weekend was our Silas’ 8th birthday and it was unseasonably warm. We had some beautiful days spent at playgrounds right after school and it was wonderful! We had a few of Silas’ friends over after school on Friday afternoon to trade Pokemon cards and we surprised them all with some new ones – it was a total hit. We had the family over later that night for pizza and dessert and then the next day Silas was able to spend his birthday money at Target on – you guessed it – more Pokemon cards! I wish I could say the rest of the weekend went well, but I think this warm weather was just a breeding ground for germs. I am down for the count right now with a horrible head cold! It was so nice to get the boys outside, myself as well, that I ALMOST think it was worth it – ha! Next up is my birthday next week, and then my nephew’s birthday and our anniversary two weeks after that. I’m hoping this head cold doesn’t stick around for long! If you’re looking for a great, easy recipe to celebrate St. Patrick’s Day this year – these delicious Irish Soda Bread Muffins are just the recipe for you. These are sweet and crusty, absolutely perfect split open with some cold butter spread on top. Be careful to not overbake them as they can get too dry!  These muffins would also be great served with an Irish Stew if you were doing a complete St. Patrick’s Day themed dinner!
