Crockpot Sweet Potato Casserole
Crockpot Sweet Potato Casserole made with fresh sweet potatoes, brown sugar, melted butter, and miniature marshmallows.
Servings 8 servings
- 6 sweet potatoes peeled and chopped
- 1/2 cup butter melted
- 3/4 cup brown sugar
- 1 1/2 cups miniature marshmallows
Peel sweet potatoes and cut into large, 2 inch pieces.
Place chopped sweet potatoes into a Crockpot.
Add in brown sugar and melted butter and stir well to coat sweet potatoes evenly.
Cover and cook on low 6-7 hours or on high 3-4 hours.
Remove lid and pierce a sweet potato with a fork. If it slides in easily, they are done. If not, put cover back on and cook an additional hour.
Sprinkle miniature marshmallows on top of sweet potatoes.
Cover and cook an additional 5-10 minutes or until marshmallows are soft and melty.
