Ingredients

  • 4 frozen waffles toasted
  • 1/4 cup butter
  • 2/3 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon rum extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped pecans
  • 1/2 cup pancake syrup
  • 3 bananas cut into 1/2 inch slices
  • 2 cups vanilla ice cream

Instructions

  • Melt butter over medium heat in a saucepan.
  • Stir in brown sugar, vanilla, rum extract, and cinnamon.
  • Bring to a simmer, then stir in pecans and syrup and continue simmering for about 1 minute.
  • Stir in bananas and cook for 4 minutes, or until bananas are soft.
  • Remove from heat, cool slightly.
  • To serve, pour bananas and sauce over waffle and top with a scoop of ice cream. Serve immediately.
