Ingredients

  • 1 lb ground beef
  • 1 small onion diced small
  • 2 large yellow squash halved length-wise and then sliced
  • 1 cup shredded carrots
  • 2 28oz cans crushed tomatoes
  • 1 cup beef broth
  • 2 cups water
  • 2 teaspoons garlic powder
  • 2 teaspoons cumin
  • 1/3 cup heavy whipping cream
  • 1 1/2 cups shredded cheddar cheese divided
  • salt & pepper to taste

Instructions

  • Brown ground beef in a large stockpot and drain leaving some of the grease still in the pot.
  • Add onions and cook until translucent.
  • Add in squash, carrots, tomatoes, beef broth, water, and seasonings.
  • Bring to a boil, then reduce heat and simmer 45 minutes.
  • Add in whipping cream and one cup cheese.
  • Simmer for an additional 1 hour.
  • Serve with additional shredded cheese sprinkled on top and salt and pepper to taste.
