1 lb ground beef 1 small onion diced small 2 large yellow squash halved length-wise and then sliced 1 cup shredded carrots 2 28oz cans crushed tomatoes 1 cup beef broth 2 cups water 2 teaspoons garlic powder 2 teaspoons cumin 1/3 cup heavy whipping cream 1 1/2 cups shredded cheddar cheese divided salt & pepper to taste
Brown ground beef in a large stockpot and drain leaving some of the grease still in the pot.
Add onions and cook until translucent.
Add in squash, carrots, tomatoes, beef broth, water, and seasonings.
Bring to a boil, then reduce heat and simmer 45 minutes.
Add in whipping cream and one cup cheese.
Simmer for an additional 1 hour.
Serve with additional shredded cheese sprinkled on top and salt and pepper to taste.
