Ingredients

  • 1/2 cup butter softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup apple finely diced

Instructions

  1. In the bowl of a stand mixer, cream together the butter and both sugars.

  2. Add in egg and vanilla extract and beat well.

  3. Add in flour, baking soda, salt, and cinnamon. Beat until well mixed.

  4. Stir in diced apple.

  5. Drop by rounded tablespoons onto an ungreased cookie sheet.

  6. Press a criss-cross pattern on the tops with a fork, if desired, and bake at 375 for 12-14 minutes.

  7. Cook on wire racks and store in an airtight container.
