- 1 lb lean ground beef
- 2 tablespoons dried minced onion
- 1 egg
- 16 buttery crackers
- 2 cups shredded cheddar cheese divided
- 1 cup chunky salsa divided
Place crackers in a ziploc bag, seal, and crush.
Meanwhile, place ground beef, onion, egg, 1 cup shredded cheese, and 1/2 cup salsa in large mixing bowl.
Add crushed cracker crumbs and mix to thoroughly combine ingredients (hands work best).
Press meat mixture evenly among 12 muffin cups.
Bake at 400 degrees for about 25 minutes, test to be sure meat is no longer pink and reaches internal temperature of 160 degrees or above.
Top each meatloaf with a spoonful of remaining salsa and sprinkling of cheese.
Bake an additional 5 minutes until cheese is melted.
