Ingredients

  • 1 lb lean ground beef
  • 2 tablespoons dried minced onion
  • 1 egg
  • 16 buttery crackers
  • 2 cups shredded cheddar cheese divided
  • 1 cup chunky salsa divided

Instructions

  • Place crackers in a ziploc bag, seal, and crush.
  • Meanwhile, place ground beef, onion, egg, 1 cup shredded cheese, and 1/2 cup salsa in large mixing bowl.
  • Add crushed cracker crumbs and mix to thoroughly combine ingredients (hands work best).
  • Press meat mixture evenly among 12 muffin cups.
  • Bake at 400 degrees for about 25 minutes, test to be sure meat is no longer pink and reaches internal temperature of 160 degrees or above.
  • Top each meatloaf with a spoonful of remaining salsa and sprinkling of cheese.
  • Bake an additional 5 minutes until cheese is melted.
