Summer Zucchini Saute

Easy Zucchini Sauté made with zucchini, cherry tomatoes, garlic, and basil. A perfect summer side dish! Pair it with your grilled favorites!

Ingredients

  • 2 tablespoons olive oil
  • 2 zucchini cut in half lengthwise and then quarter inch slices
  • 3/4 cup cherry tomatoes halved
  • 3 cloves garlic minced
  • 2 tablespoons fresh basil chopped fine
  • 1/2 teaspoon kosher salt

Instructions

  • Heat olive oil in large skillet over medium high heat.
  • Add zucchini and sauté for 6-8 minutes or until slightly browned and softened.
  • Add the tomatoes and cook another 3-4 minutes or until softened.
  • Add garlic and cook another minute.
  • Remove skillet from heat and stir in basil and kosher salt (add more salt to taste).
