- 2 tablespoons olive oil
- 2 zucchini cut in half lengthwise and then quarter inch slices
- 3/4 cup cherry tomatoes halved
- 3 cloves garlic minced
- 2 tablespoons fresh basil chopped fine
- 1/2 teaspoon kosher salt
Heat olive oil in large skillet over medium high heat.
Add zucchini and sauté for 6-8 minutes or until slightly browned and softened.
Add the tomatoes and cook another 3-4 minutes or until softened.
Add garlic and cook another minute.
Remove skillet from heat and stir in basil and kosher salt (add more salt to taste).
