Chocolate Chip Mocha Mousse

1 1/4 cup semi sweet mini chocolate chips divided 3 tablespoons butter 1 tablespoon brewed coffee 2 teaspoons vanilla extract 1/2 cup whipping cream
Place 1 cup mini chocolate chips and butter in a bowl and microwave for 45 seconds.
Stir and heat another 15 seconds, or until chocolate is completely melted.
Stir in coffee and vanilla extract, set aside.
In a stand mixer, whip the heaving whipping cream until thick.
Stir whipped cream into the chocolate mixture.
Spoon into serving dishes and sprinkle remaining mini chocolate chips evenly over both dishes.
Refrigerate 1 hour, or eat immediately.
