Ingredients

  • 1 lb mild ground sausage
  • 2 tablespoons dried minced onion
  • 8 eggs
  • 1/2 cup milk
  • 1/2 cup cottage cheese
  • 1 cup shredded swiss cheese
  • 1 cup shredded cheddar cheese
  • sliced green onion

Instructions

  • Brown the sausage in a skillet and spread in the bottom of a greased 9 x 13 baking dish.
  • Sprinkle minced onion over sausage.
  • In a medium bowl, whisk together the eggs, milk, and cottage cheese.
  • Pour over sausage in baking dish.
  • Bake at 350 degrees for 15 minutes, or until eggs are almost set.
  • Remove from oven and top with shredded swiss and cheddar.
  • Bake for an additional 10 minutes or until the cheese is melted and the eggs are set.
  • Sprinkle green onion over top of casserole before serving.
