- 1 lb mild ground sausage
- 2 tablespoons dried minced onion
- 8 eggs
- 1/2 cup milk
- 1/2 cup cottage cheese
- 1 cup shredded swiss cheese
- 1 cup shredded cheddar cheese
- sliced green onion
Brown the sausage in a skillet and spread in the bottom of a greased 9 x 13 baking dish.
Sprinkle minced onion over sausage.
In a medium bowl, whisk together the eggs, milk, and cottage cheese.
Pour over sausage in baking dish.
Bake at 350 degrees for 15 minutes, or until eggs are almost set.
Remove from oven and top with shredded swiss and cheddar.
Bake for an additional 10 minutes or until the cheese is melted and the eggs are set.
Sprinkle green onion over top of casserole before serving.
