Chili Cheese Casserole

This yummy Chili Cheese Casserole is loaded with canned chili, corn, salsa, and cheddar cheese - enough for a large family, or freeze half for another meal!

Ingredients

  • 16 oz rotini pasta cooked
  • 2 25 oz cans chili with beans
  • 2 15 oz cans corn, drained
  • 24 oz jar salsa
  • 3 cups shredded cheddar cheese
  • sour cream

Instructions

  • Cook pasta according to package directions, drain, and return to pot. Add chili, corn, salsa, and 2 cups cheddar. Stir until well combined.
  • Pour into a greased 9 x 13 baking dish. Top with remaining 1 cup cheddar.
  • Cover with foil and bake at 350 for 25 minutes.
  • Remove foil and bake an additional 5 minutes or until cheese is completely melted and casserole is heated through. Top servings with sour cream, if desired.
