Caramel Apple Pie Fudge

- 12 gingersnap cookies crushed finely
- 3 cups white chocolate chips
- 1/2 cup apple pie filling
- 3/4 cup butter
- 1 cup heavy cream
- 3 cups sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp salt
Line an 8 x 8 square baking dish with foil or parchment paper.
In a large mixing bowl, stir together gingersnap cookie crumbs, white chocolate chips, and apple pie filling.
In a large saucepan, heat butter, cream, sugar, spices, and salt over medium heat.
Stir occasionally to evenly melt butter.
Once mixture comes to a full rolling bowl, continue to cook stirring constantly for 4 minutes.
Pour caramel mixture over chocolate chips.
Beat with a hand mixer until chocolate chips are completely melted and batter is smooth.
Pour into lined baking dish.
Refrigerate at least 3 hours before slicing into pieces. Store in a container with a lid.
