Ingredients

  • 12 gingersnap cookies crushed finely
  • 3 cups white chocolate chips
  • 1/2 cup apple pie filling
  • 3/4 cup butter
  • 1 cup heavy cream
  • 3 cups sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 1/2 tsp salt

Instructions

  • Line an 8 x 8 square baking dish with foil or parchment paper.
  • In a large mixing bowl, stir together gingersnap cookie crumbs, white chocolate chips, and apple pie filling.
  • In a large saucepan, heat butter, cream, sugar, spices, and salt over medium heat.
  • Stir occasionally to evenly melt butter.
  • Once mixture comes to a full rolling bowl, continue to cook stirring constantly for 4 minutes.
  • Pour caramel mixture over chocolate chips.
  • Beat with a hand mixer until chocolate chips are completely melted and batter is smooth.
  • Pour into lined baking dish.
  • Refrigerate at least 3 hours before slicing into pieces. Store in a container with a lid.
