Crockpot Tuscan Bean Soup
Crockpot Tuscan Bean Soup made with red bliss potatoes, Great Northern beans, carrots, onion, ham, and seasonings.
Servings 6 servings
- 5 small red potatoes cut into chunks
- 4 carrots peeled and sliced
- 1/2 cup onion diced
- 4 cloves garlic sliced thin
- 30 oz Great Northern beans drained and rinsed
- 2 cups cooked ham diced
- 4 cups chicken broth divided
- 1 tsp Italian seasoning
- 1 tsp dried parsley
- 1/2 tsp salt
Add potatoes, carrots, onion, garlic, beans, ham, 2 cups chicken broth, seasonings, and salt to the bottom of a Crockpot.
Cook on low 8 hours, or high 4 hours.
Stir in an additional 1-2 cups chicken broth and cook for another 30 minutes, or until heated through.
