  • 1 cup softened butter
  • 2/3 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 10 oz peanut butter baking chips


  • In the bowl of a stand mixer, blend softened butter, peanut butter, and vanilla extract until smooth.
  • Add in sugar and eggs and blend until well mixed.
  • Add in flour, baking soda, and salt and blend until all ingredients are well incorporated.
  • Remove bowl from the stand mixer.
  • Add in peanut butter baking chips and stir well.
  • Using a tablespoon measuring spoon, scoop dough into heaping tablespoonfuls.
  • Roll tablespoonfuls of cookie dough with your hands to make a ball.
  • Place cookie dough balls on cookie sheets lined with parchment paper or non-stick baking mats.
  • Bake at 350 degrees for 12 to 15 minutes or until cookies are just beginning to brown on the edges.
  • Cool cookies on wire racks before storing.
