In the bowl of a stand mixer, blend softened butter, peanut butter, and vanilla extract until smooth.
Add in sugar and eggs and blend until well mixed.
Add in flour, baking soda, and salt and blend until all ingredients are well incorporated.
Remove bowl from the stand mixer.
Add in peanut butter baking chips and stir well.
Using a tablespoon measuring spoon, scoop dough into heaping tablespoonfuls.
Roll tablespoonfuls of cookie dough with your hands to make a ball.
Place cookie dough balls on cookie sheets lined with parchment paper or non-stick baking mats.
Bake at 350 degrees for 12 to 15 minutes or until cookies are just beginning to brown on the edges.
Cool cookies on wire racks before storing.
