Ingredients

  • 4 lbs russet potatoes peeled and sliced thin
  • 24 oz Wright® Brand Hickory Smoked Bacon diced
  • 1 onion peeled and diced
  • 8 oz cream cheese cubed
  • 2 cups shredded cheddar cheese
  • 2 10 3/4 oz cans cream of chicken soup
  • salt and pepper to taste

Instructions

  • Layer half of the sliced potatoes, half of the diced bacon, and half of the diced onion in the bottom of a slow cooker.
  • Add layers of half of the cubed cream cheese and half of the shredded cheese.
  • Repeat layers with remaining half of ingredients.
  • Spread condensed cream of chicken soup over the top.
  • Cover and cook on low 8 - 10 hours, or on high 4 hours.
  • Remove lid and stir well to incorporate all ingredients.
  • Switch to "keep warm" mode and serve warm out of the slow cooker.
