2 cups sugar 1 cup oil 1/4 cup applesauce 3 eggs 1 1/2 tsp vanilla extract 3 cups flour 1 tsp baking soda 1 tsp salt 3/4 tsp cinnamon 3 cups apples peeled and diced small powdered sugar
Cream together sugar, oil, applesauce, eggs, and vanilla extract in a stand mixer.
In a separate bowl, stir together flour, baking soda, salt, and cinnamon.
Gradually beat flour mixture into sugar mixture. Gently stir in chopped apples.
Spread evenly into a greased Bundt pan. Bake at 350 degrees for one hour 10 minutes, or until cake tester comes out clean.
Cool on a wire rack and dust with powdered sugar.
