This Chicken Cordon Bleu Casserole is the perfect chilly weeknight meal! Fresh chicken, ham, and swiss cheese with a creamy sauce and topped with buttered bread cubes - delicious!
Servings 6 servings
- 8 boneless skinless chicken breasts
- 1/2 lb thin sliced black forest deli ham
- 8 oz baby bella mushrooms sliced
- 8 slices swiss cheese
- 1/4 cup water
- 10 3/4 oz can cream of chicken soup
- 3 cups fresh potato bread cubes
- 1/2 cup butter melted and slightly cooled
Spray the bottom of a 9 x 13 baking dish with nonstick spray. Place chicken in the bottom of the dish (slice them in half if they're really thick).
Top chicken with sliced ham, fresh mushrooms, and sliced swiss cheese. In a small bowl, whisk together water and soup. Spread evenly over dish.
In a medium bowl, stir together bread cubes and melted butter. Sprinkle evenly over casserole. Cover tightly with foil and bake at 325 degrees for 1 hour 30 minutes or until chicken is cooked through. (Remove foil for last 15 minutes of bake time to brown the top of the casserole).
