Avocado Hummus

Avocado Hummus recipe made with mashed avocado, cannellini beans, parsley, garlic, and lemon. Such a great homemade dip!

Ingredients

  • 1 medium avocado
  • 15 oz cannellini beans drained and rinsed
  • 1/2 cup fresh parsley
  • 1 lemon
  • 2 cloves garlic
  • 1/2 tsp salt to taste

Instructions

  • Peel, seed, and chop avocado and place in the bowl of a food processor.
  • Drain and rinse beans and add to the bowl.
  • Drop in chopped fresh parsley and garlic.
  • Juice the lemon and add the juice to the food processor.
  • Pulse until all ingredients are well combined and hummus is thick and creamy.
  • Add water as needed to desired texture.
  • Add salt as needed to desired taste.
  • Serve with pita, tortilla chips, or fresh veggies.
