Avocado Hummus
Avocado Hummus recipe made with mashed avocado, cannellini beans, parsley, garlic, and lemon. Such a great homemade dip!

- 1 medium avocado
- 15 oz cannellini beans drained and rinsed
- 1/2 cup fresh parsley
- 1 lemon
- 2 cloves garlic
- 1/2 tsp salt to taste
Peel, seed, and chop avocado and place in the bowl of a food processor.
Drain and rinse beans and add to the bowl.
Drop in chopped fresh parsley and garlic.
Juice the lemon and add the juice to the food processor.
Pulse until all ingredients are well combined and hummus is thick and creamy.
Add water as needed to desired texture.
Add salt as needed to desired taste.
Serve with pita, tortilla chips, or fresh veggies.
