S'mores Cookies

S'mores Cookies recipe made with sweet graham cracker cookies, gooey marshmallows, and topped with melted chocolate!

Ingredients

  • 1 cup butter softened
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/3 cup flour
  • 1 cup graham cracker crumbs
  • 1/8 teaspoon salt
  • 72 miniature marshmallows
  • 3 1.55 oz Hershey bars, broken into rectangles

Instructions

  • In a stand mixer, cream together butter and brown sugar.
  • Add in egg and vanilla, and beat well.
  • Add flour, graham cracker crumbs, and salt and beat on low until dough is well incorporated.
  • Scoop dough by tablespoonfuls, roll into balls, and place onto ungreased cookie sheets.
  • Press your thumb into the center of each ball.
  • Bake cookies at 325 degrees for 10 minutes.
  • Remove from oven and place two miniature marshmallows into the indentations in each of the cookies.
  • Place back into the oven for 3 minutes.
  • Remove from oven and immediately place one rectangle of chocolate on top of each cookie.
  • Let cookies stand for 3 minutes and then spread chocolate over top of the cookies with a butter knife.
  • Allow to cool completely before serving.
