- 1/3 cup creamy peanut butter
- 1 egg beaten
- 1 cup milk
- 1 cup baking mix
- 2 tbsp sugar
- non stick spray
In a medium mixing bowl, whisk peanut butter, egg, and milk until mostly smooth.
Add in baking mix and sugar.
Stir with a large spoon until well combined and a few lumps still remain.
Heat a skillet over medium heat.
Spray skillet with nonstick spray.
Using a 1/3 cup measuring cup, scoop batter onto skillet.
Cook until bubbles start forming on edges of pancake, about 3 minutes.
Flip and cook an additional 2 minutes or until pancake is done.
Transfer pancake from skillet to a plate.
Repeat with remaining batter. Serve pancakes immediately.
