Ingredients

  • 1/3 cup creamy peanut butter
  • 1 egg beaten
  • 1 cup milk
  • 1 cup baking mix
  • 2 tbsp sugar
  • non stick spray

Instructions

  • In a medium mixing bowl, whisk peanut butter, egg, and milk until mostly smooth.
  • Add in baking mix and sugar.
  • Stir with a large spoon until well combined and a few lumps still remain.
  • Heat a skillet over medium heat.
  • Spray skillet with nonstick spray.
  • Using a 1/3 cup measuring cup, scoop batter onto skillet.
  • Cook until bubbles start forming on edges of pancake, about 3 minutes.
  • Flip and cook an additional 2 minutes or until pancake is done.
  • Transfer pancake from skillet to a plate.
  • Repeat with remaining batter. Serve pancakes immediately.
