This Caramel Apple Popcorn is so easy on the stove top! Classic caramel mixed with popcorn and dried apple and roasted in the oven - the perfect fall treat!

Ingredients

  • 2 bags microwave popcorn popped
  • 2 cups apple chips diced
  • 1/2 cup butter
  • 1/2 cup light corn syrup
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 1/2 tsp baking soda

Instructions

  • Pick out any unpopped kernels from the popcorn and place popped popcorn into a large, greased roasting pan.
  • Stir in apple chip pieces and set aside.
  • Heat butter, corn syrup, and brown sugar in a medium saucepan over medium heat, stirring until mixture comes to a rolling boil.
  • Allow mixture to boil without stirring for 5 minutes.
  • Turn off the heat and stir in vanilla and baking soda until lighter in color and slightly fluffy.
  • Pour mixture over popcorn and apple chips in roasting pan. Stir to coat well.
  • Bake at 250 degrees for 45 minutes, removing pan from the oven and stirring at 15 minute intervals.
  • Allow mixture to cool. Break up into small pieces and serve immediately or store in a sealed container.
