Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 2/3 cup water
  • 16 oz box penne pasta cooked and drained
  • 4 tbsp butter
  • 4 tsp flour
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 12 oz bag frozen corn steamed according to package directions
  • toppings: salsa, sour cream, avocado

Instructions

  1. Brown and drain ground beef.

  2. Stir in taco seasoning and water.

  3. Bring to a boil and then reduce heat and simmer until all the liquid is absorbed.

  4. Add to cooked pasta.

  5. In a large saucepan, melt butter over medium heat.

  6. Whisk in flour.

  7. Slowly whisk in milk.

  8. Bring to a boil a cook while stirring 2 minutes.

  9. Add in cheese and continue cooking until cheese is melted.

  10. Pour cheese over cooked pasta and taco meat.

  11. Add in corn. Stir to combine well.

  12. Serve immediately with preferred toppings.
