  • 2 cups raisins
  • 3 cups flour
  • 1 cup sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • 1/4 cup shortening
  • 1 1/2 cups milk
  • 2 eggs beaten


  1. Fill a saucepan half way with water and bring to a boil.

  2. Add raisins and continue boiling for 3 minutes.

  3. Drain and lightly dust with flour.

  4. Meanwhile, sift together flour, sugar, baking powder, and salt.

  5. Add shortening using a pastry blender or your fingers.

  6. Stir in milk and eggs until fully moistened.

  7. Carefully stir in raisins.

  8. Spread into a loaf pan coated with non-stick spray and bake at 350 degrees for 1 hour or until a skewer comes out clean.

  9. Transfer to a wire rack and allow to cool completely before serving.
