Beer Cheese Taco Boats

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 15 oz can refried beans
  • 1 tbsp olive oil
  • 3 cloves minced garlic
  • 3/4 cup beer
  • 3 cups shredded cheddar cheese
  • 4 tbsp milk
  • pico de gallo

Instructions

  • Brown ground beef, drain, and add taco seasoning and water as instructed on the taco seasoning packet. Stir in refried beans.
  • Meanwhile, in a large skillet, saute onion in olive oil over medium-high heat until tender. Add in garlic and cook one minute.
  • Stir in beer and cook 3 minutes until very bubbly. Stir in cheese, one handful at a time, until cheese is completely melted. Remove from heat. Cheese will thicken as it stands, so stir in milk as necessary to thin it out.
  • Fill taco boats with taco meat mixture, pico de gallo, and drizzled beer cheese. Serve immediately.
