Ingredients

  • 1 cup flour
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 2 tbsp canola oil
  • 1 cup jellied cranberry sauce
  • 1/2 cup golden raisins

Instructions

  • In a large mixing bowl, stir together flour, sugar, baking powder, baking soda, and salt.
  • In a separate mixing bowl, whisk together egg, oil, and cranberry sauce until mostly smooth.
  • Pour cranberry sauce mixture into flour mixture. Stir until just moist, batter will be lumpy. Stir in raisins.
  • Spread into a greased loaf pan. Bake at 350 degrees for 45 minutes or until a cake tester comes out clean. Cool completely before slicing and serving.
