Ingredients

  • 2 cups sugar
  • 1 cup oil
  • 1/4 cup applesauce
  • 3 eggs
  • 1 1/2 tsp vanilla extract
  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 tsp cinnamon
  • 3 cups apples peeled and diced small
  • powdered sugar

Instructions

  1. Cream together sugar, oil, applesauce, eggs, and vanilla extract in a stand mixer.

  2. In a separate bowl, stir together flour, baking soda, salt, and cinnamon.

  3. Gradually beat flour mixture into sugar mixture. Gently stir in chopped apples.

  4. Spread evenly into a greased Bundt pan. Bake at 350 degrees for one hour 10 minutes, or until cake tester comes out clean.

  5. Cool on a wire rack and dust with powdered sugar.
