  • 1/2 cup flour
  • 1/2 cup quick oats
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup buttermilk
  • 2 tbsp oil
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 egg beaten
  • 1/2 cup white chocolate chips
  • 1/2 cup dried cranberries


  1. In a mixing bowl, combine flour, oats, sugar, baking powder, baking soda, and salt. Mix in buttermilk, oil, extracts, and beaten egg. Allow mixture to sit for 5 minutes to thicken slightly.

  2. Gently stir in chips and dried cranberries.

  3. Drop 1/3 cup of batter on a greased griddle on medium heat. Flip pancakes when the edges turn dry and a few bubbles are visible on the surface.
