- 2 cups white rice steamed
- 20 oz crushed pineapple
- 1 cup heavy whipping cream
- 1/4 cup sugar
- 1/2 tsp vanilla
- additional pineapple slices for garnish
In a mixing bowl, beat whipping cream, sugar, and vanilla for 3 minutes or until stiff peaks form.
Gently fold in rice and pineapple.
Cover and refrigerate 3 hours, overnight is best.
Serve pudding cold.
