Cake Mix Rhubarb Cobbler

A rhubarb cobbler dessert made with fresh rhubarb, cake mix, jello mix, and butter.

  • 4 cups rhubarb washed and chopped
  • 1 cup sugar
  • 1 box yellow cake mix dry
  • 3 oz box raspberry jello mix dry
  • 1 cup water
  • 1/3 c butter melted


  • Spray a 9 x 13 pan with non stick spray. Spread rhubarb evenly over the bottom of the dish. Sprinkle sugar evenly over rhubarb.
  • Sprinkle dry cake mix over the sugar, followed by dry jello mix. Pour water over the dish and then drizzle melted butter over top - do not mix.
  • Bake at 350 degrees for 45 minutes. Allow to cool before scooping into bowls and serving.
