Baked Lemon Pepper Chicken

  • 10 chicken thighs skinless
  • 2 tbsp olive oil
  • 2 lemons divided
  • 1 1/2 tsp dried parsley
  • 2 tbsp lemon pepper seasoning
  • salt to taste


  • Place chicken thighs on a large baking sheet coated with non stick cooking spray.
  • In a small bowl, whisk together olive oil and juice of one lemon. Brush mixture evenly on all sides of chicken thighs.
  • Sprinkle parsley and lemon pepper evenly on all sides of chicken thighs. Bake at 400 degrees for 30 minutes. Reduce heat to 375 and bake an additional 15 - 25 minutes or until internal temperature of chicken reaches 165 degrees.
  • Remove chicken from oven and drizzle juice of remaining lemon over chicken. Serve immediately. (Serving size is 2 chicken thighs)
