Baked Lemon Pepper Chicken
Baked Lemon Pepper Chicken recipe made with boneless skinless chicken chicken thighs drizzled with olive oil and sprinkled with parsley, lemon pepper seasoning, and fresh lemon juice.

- 10 chicken thighs skinless
- 2 tbsp olive oil
- 2 lemons divided
- 1 1/2 tsp dried parsley
- 2 tbsp lemon pepper seasoning
- salt to taste
Place chicken thighs on a large baking sheet coated with non stick cooking spray.
In a small bowl, whisk together olive oil and juice of one lemon. Brush mixture evenly on all sides of chicken thighs.
Sprinkle parsley and lemon pepper evenly on all sides of chicken thighs. Bake at 400 degrees for 30 minutes. Reduce heat to 375 and bake an additional 15 - 25 minutes or until internal temperature of chicken reaches 165 degrees.
Remove chicken from oven and drizzle juice of remaining lemon over chicken. Serve immediately. (Serving size is 2 chicken thighs)
