Cheddar Spinach Mashed Potatoes

  • 8 potatoes peeled and quartered
  • 2 tbsp olive oil
  • 16 oz fresh baby spinach
  • 2 cloves garlic minced
  • 1/2 cup butter
  • 3/4 cup sour cream
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup shredded cheddar cheese


  1. Place peeled potatoes in a stock pot, cover with water, and bring to a boil. Continue boiling for 15 - 20 minutes or until potatoes are easily pierced with a fork. Drain and transfer potatoes to the bowl of a stand mixer.

  2. While potatoes are boiling, heat olive oil in a deep skillet over medium heat. Add in spinach and garlic and saute until wilted, about 5 minutes. Remove from heat.

  3. Mash potatoes in stand mixer on medium speed. Add in butter, sour cream, salt, and pepper.

  4. Add in spinach mixture and cheddar cheese. Mix until well incorporated. Add additional salt and pepper to taste.
