Mix stuffing mix and melted butter in a bowl and set aside. In a separate bowl, add cubed butternut squash and cover bowl with plastic wrap. Microwave until tender.

Next step, lightly mash the cooked butternut squash. Add in the shredded carrots and diced onion.

Then, add in a can of (undiluted) cream of chicken soup and sour cream. Stir until ingredients are combined well.

Spread most of the stuffing mix into the bottom of a baking dish. Add in the butternut squash mixture. Top with remaining stuffing mix.

Bake the casserole at 350 degrees for 30 minutes until bubbly. Serve warm and be sure to refrigerate leftovers.
