A quick Avocado Hummus recipe made with ripe avocado, cannellini beans, garlic, parsley, and lemon juice. No tahini needed for this easy and delicious dip! Perfect for a last minute party appetizer!

Ingredients: – 1 medium avocado – 15 oz cannellini beans drained and rinsed – 1/2 cup fresh parsley – 1 lemon – 2 cloves garlic – 1/2 tsp salt to taste

Drain and rinse the cannellini beans. Transfer them to the bowl of a food processor or blender. Rinse the fresh parsley and add that in as well.

Slice the avocado in half, remove the pit, and scoop out the avocado into the bowl. Add in the peeled garlic cloves and lemon juice.

Put the lid on the bowl and pulse until somewhat smooth. Remove the lid and scrape down the sides.

If it seems a bit too thick, add a tablespoon or two of water. Pulse again until the hummus is smooth.

Taste the hummus and add a quarter teaspoon – a half teaspoon of salt as needed.
