17Jul2012 Tropical Ambrosia Salad This Ambrosia is 1/2 the reason my surprise sweet 16 party was spoiled. I opened the pantry door to find two cans of mandarin oranges. Mom ONLY bought mandarin oranges to make Ambrosia, and she only made Ambrosia for parties. My mind starting wandering… What was the other 1/2 reason I figured out about my surprise party, you ask? My dad. He’s horrible at secrets!! While I was in the room, he told my mom a distant cousin of mine “called back.” We only see this distant cousin at parties. Like, major parties. I knew! But I was so excited and the party was a blast (even though it was almost 15 YEARS AGO). This recipe for Ambrosia is part of my childhood. I always thought it was weird that sour cream was one of the main ingredients, you really can’t tell at all. This salad has a tropical, dreamy taste. Tropical Ambrosia Salad a Semi Homemade Mom original recipe 1 cup mandarin oranges, drained 1 cup pineapple chunks, drained 1 cup coconut 1 cup sour cream 1 cup mini marshmallows Place all ingredients in a medium mixing bowl and combine well. Refrigerate overnight for best flavor. This salad can easily be doubled or tripled, we usually double for parties. The batch pictured above was for my sister’s baby shower. We used clear plastic punch cups to hold guests’ individual servings.
