If you are a chocolate lover, or have one in your life, this no bake dessert is a must try! Chocolate Mud Pie is exactly as delicious as it sounds – as much chocolate as you can fit into a pie recipe! I especially enjoy no bake desserts like this one as well. No need to heat up the oven, especially in the summer months when it’s so hot! This mud pie recipe has a bottom fudge layer, sprinkled with chopped pecans, a chocolate pudding layer, and a light chocolate whipped cream layer at the very top. It is simply heavenly to enjoy any time of the year! Can I skip the pecans in this recipe? Sure! I’m not a huge fan of nuts either, though the texture is really nice in this pie. You could substitute the pecans for a layer of miniature chocolate chips to keep a similar texture if you want. What’s in this recipe? You’ll need a chocolate Oreo crust, semi sweet baking chocolate, sweetened condensed milk, chopped pecans, instant chocolate pudding mix, milk, and Cool Whip. Be sure to thaw the Cool Whip in the refrigerator overnight before making this pie. Where can I find semi sweet baking chocolate? The baking chocolate is typically found in the same aisle as the baking ingredients in the grocery store. In my store, they are located directly above the bags of chocolate chips for making cookies. Baking chocolate is typically sold in bars that can easily be melted. How do I melt the baking chocolate? This is going to depend on the brand that you have, check the package for the specific directions. You’ll typically microwave the chocolate for small increments of time, stir, and then microwave again until the chocolate is completely melted. How to make this recipe: Melt the baking chocolate according to package directions. Be sure to stir well and not overheat the chocolate so that it doesn’t scorch. Stir in the sweetened condensed milk. This mixture will become pretty thick (and should taste just like fudge)! Spread this evenly into the bottom of a chocolate Oreo cookie crust. 2. Sprinkle the chopped pecans over the fudge layer evenly. Press them into the fudge layer gently. 3. Using a hand mixer, beat together the milk and the dry instant pudding mixes for two minutes. 4. Spread some of this pudding mixture evenly over the chopped pecans in the pie crust. 5. Mix the remaining pudding mixture with thawed Cool Whip. Spread this evenly over top of the pie. Use a spatula to gently spread it to the edges of the pie. 6. Refrigerate the pie at least 2 hours or ideally overnight. How long does this pie keep for? Keep this mud pie refrigerated for up to 3 days. Freezing this pie is not recommended. Can I use crushed Oreos instead of a ready-made crust? Sure! Just make the crust as you normally would with the crushed Oreos, and then proceed with the rest of the recipe instructions from that point. What kind of chocolate pudding mix is used? You’ll need the instant pudding mixes for this recipe – the cook and serve pudding mix will not work in this! How many servings? You’ll get between 6 and 8 slices of this pie, depending on how large you make the slices! Can dairy free milk be used? Soy, almond, or coconut milk would probably still work to get the pudding to set correctly.
