An easy and delish appetizer recipe! We are HUGE sea-foodies in this house. In fact, any time one of the boys’ birthdays come around, they always ask for seafood! And as someone who’s trying to be more nutritious in what I eat every day, I am more than willing to say, “Yes!” In fact, this time of year always make me think of seafood. With Paul’s birthday on Valentine’s Day, Silas’ birthday at the end of February, my birthday at the beginning of March, and our wedding anniversary at the end of March – there’s a lot to celebrate! And of course, we’re all going to celebrate with our favorite kind of food. Silas is totally our shrimp man and he was ALL OVER this bruschetta. He’s not a huge fan of raw tomatoes, so I caught the bugger eating the shrimp tops off of a few slices. It was a partial win with him, our pickiest eater, so I’m not going to complain. He even declared this as his official birthday dinner request! “Only without the tomatoes, Mom.” Goof. Whatever you do, DO NOT listen to my 6 year old and skip the fresh tomato bruschetta – it is absolutely amazing along with the flavors of the shrimp scampi. These ingredients complement each other so well! Seriously, this is the best bruschetta ever! If you’re planning a party or get together at any time in the near future, you simply have to try these! Cover and refrigerate while shrimp is cooking.Prepare shrimp scampi according to package directions. Remove from heat, and cool slightly.Meanwhile, spread a heaping tablespoonful of tomato mixture onto about 20 bread slices. Top each with a shrimp and drizzle pan drippings over all.Bake at 400 degrees for 4-6 minutes or until heated through and bread is slightly toasted on edges. Serve immediately.
