If your family loves stuffed peppers and meatloaf, they’ll go crazy for this dinner idea! Almost four years ago, I posted my recipe for Cheesy Stuffed Pepper Casserole and clearly you all have loved it just as much as my family did – and still does. That recipe post still gets a lot of traffic every single day! If you haven’t tried that one, it’s essentially un-stuffed peppers in a casserole dish with the usually filling ingredients. You really need to put that one on your menu plan ASAP! A few months before that, I had posted the recipe Chicken & Cornbread Stuffed Peppers for you as well – that is SO GOOD, too! Definitely a fun twist on traditional stuffed peppers. The addition of the cornbread mix, too makes that one over the top! I’m back again with my favorite stuffed peppers, this time with no rice and a purely meatloaf mix filling for the peppers. I have fond memories of my mom’s meatloaf growing up. She made this sweet brown sugar tomato sauce that was just amazing. And clearly you can see how much I love stuffed peppers! This recipe mixes the two and hits it out of the park for a fun and different family dinner and is just really simple to put together. What’s in this recipe? Typical stuffed pepper ingredients like ground beef, bread crumbs, egg, and seasonings. But note: no rice in this one! How to make this recipe: In a large bowl, mix ground beef, egg, bread crumbs, Worcestershire sauce, ketchup, garlic powder, salt, and pepper. 2. Spread crushed tomatoes in the bottom of the baking dish. Arrange green peppers in the dish and stuff them evenly with the meat mixture. 3. Top with more crushed peppers. Bake until almost done. 4. Top with Parmesan cheese and return to the oven to continue baking until peppers are cooked through. These are HOT! So let them cool for 10 – 15 minutes before serving. Therese says September 5, 2020 at 1:49 am This reminded me of the stuff peppers my Mom made growing up. I added some fine shredded cheese to the meat mix along with fresh onions instead of dried. I also chopped a few of the tops and added it to the mix. I blanched the peppers for a few minutes to take out the bitter taste peppers can have. Reply
