26Sep2011 Grilled Stuffed Burritos Pin It I have to admit, even though I love Mexican food I was never really fond of Taco Bell. My husband however, well that’s a different story! I was forced to find something that I liked there because he was not going to stop requesting Taco Bell anytime we decided to get something quick for dinner. Taco Bell’s grilled stuffed burritos were really the only thing there I liked, but they were different every time I ordered them. Most of the time the refried beans were on one side and the beef was on the other. So I decided to try and make my own and they turned out FANTASTIC! The best part about this recipe is that you can prepare the basic filling and everyone can customize them according to how spicy (or not in my case) they like. Grilled Stuffed Burritos 1 lb ground beef 1 pkg taco seasoning 2/3 cup water 1 can refried beans 1 pkg Spanish Rice (and the ingredients to prepare) 1/3 cup salsa 2 cups shredded cheddar cheese 12 flour tortillas Prepare spanish rice according to package directions; set aside. Brown ground beef in pan and drain. Add taco seasoning and water, simmer over medium heat until liquid is absorbed. Stir in refried beans and salsa. Preheat indoor grill (I used my George Foreman). On a tortilla, spread a heaping spoonful of meat filling. Top with a good scoop of spanish rice and sprinkle with cheese. Wrap up burrito style and grill for 5 minutes. Serve with sour cream if desired. Look at that cheesy goodness!
