16Apr2012 Grilled Chicken Cordon Bleu Sandwiches We have been on a serious grill kick lately and I’ve been pinning a TON of grill recipes that look delicious! This was one that we had to have on the menu that week. It’s such a simple idea and it turned out absolutely fabulous. As an added bonus, this is a meal that requires very little prep time and the hubby cooks it up for you! Win-win! Grilled Chicken Cordon Bleu Sandwiches from Recipe Shoebox 4 boneless, skinless chicken breasts 8 hamburger rolls (you want nice sized rolls, spring for the ones at the bakery department or better yet check the bread mark downs, you might get lucky!) 8 slices deli ham 8 slices swiss cheese dijon mustard butter Pound out chicken to even out thickness. I do this by dumping the chicken in a ziploc bag, grabbing my handy can of kidney beans, and whacking. It’s an art form, what can I say :). Slice chicken breasts in half (they fit better on the rolls that way). Grill the chicken flipping once, making sure the internal temp reaches 165 degrees. Spread a generous amount of dijon mustard on top of each chicken piece, layer a slice of deli ham, and then top with a slice of swiss and grill until cheese is melted. Slice rolls in half, spread insides with butter, and grill for a few minutes just until toasty. We really loved these and next time look forward to trying them with honey mustard. YUM!
