22Dec2012 Egg Nog Cookies Well, Christmas break has officially begun in the Miller house! This season has been crazy and I’m not usually this last minute, but I do still have a few things to buy! Please tell me I’m not the only one. 🙂 One of the first things we normally do every year is take the kids to see Santa. This year? We went on Wednesday! And I was completely shocked when I put Wesley on Santa’s lap and he started crying hysterical. Of course Silas, my little man, was happy as a clam and sat there for a few minutes after the pictures were taken telling Santa what he wanted for Christmas. My eyes are tearing up just typing this because I can’t believe he’s this big already. I’m realizing this year that as they get older, my main job during the Christmas season is not going to be making sure I’m creating awesome memories for them, or baking some delicious new treats, or hunting all over town for the perfect present. Our primary goal as parents is to help them understand the magnitude of what Christmas morning meant for us. God, himself, came down to rescue us. The rest is just details. How can it not be? Egg Nog Cookies makes approx. 4 dozen 3/4 cup butter, softened 1 1/4 cups sugar 3/4 cup egg nog 2 egg yolks 1 teaspoon vanilla 2 1/4 cups flour 1 teaspoon baking powder 1/2 teaspoon nutmeg 1/4 teaspoon cinnamon Egg Nog Glaze 1 cup powdered sugar 2 1/2 tablespoons egg nog (approximately) In a stand mixer, beat butter and sugar until creamy. Add in egg nog, egg yolks, and vanilla beating until well combined. In a separate bowl, sift together flour, baking powder, nutmeg, and cinnamon. While mixer is on low speed, gradually add in the dry mixture. Drop tablespoonfuls onto an ungreased cookie sheet and bake at 300 degrees for 20-23 minutes until the edges begin to brown. Cool on wire racks. For the glaze, whisk together powdered sugar and 2 tablespoons egg nog. Add additional egg nog 1/4 tablespoon at a time until desired glaze consistency.
